As for whether it's worth it, you're really getting ahead of yourself. Those kinds of tweaks come after many hours of mapping and testing, testing and mapping. I'd recommend you start on a smaller project, like a three-to-five puzzle map and work in small chunks until you have enough of the pieces to put together this big project.
And be warned that using Portal 1 will prevent you from using instances, which are a huge timesaver. I'm sure there are other reasons, as well, that not mapping in the latest Hammer will slow you down.
New to mapping? Never used Source SDK before? LOOK HERE!

However this project of yours is very ambitious with very little chance of succeeding. Try doing a project that is a little less ambitous to get a good foundation on Hammer first.

Lazer grid is very possible. You may have to make some special textures for portal 1 though.
However this project of yours is very ambitious with very little chance of succeeding. Try doing a project that is a little less ambitous to get a good foundation on Hammer first.
