How do you get the model to reference a camera in the map?

I'm not sure what you mean.

The security cameras are prop_security_camera

You can have a point_viewcontrol to have a camera take over the player's view

You can use a point_camera (I think, it's something like that) and a brush that has a monitor texture and func_monitor to display a camera from a brush (I believe the instance that has wheatley's screens uses that)
